Recipes: Bruschetta variations

Serve Bruscetta as an alternative to Herb or Garlic Bread - it's a quick and easy entree that will delight any crowd.

INGREDIENTS:
Olive oil
3 cloves of garlic, crushed
1 loaf of Vienna bread, sliced on the bias
2 Shallots, finely chopped
250g of tomatoes, finely chopped
Basil (doesn't have to be fresh)
Juice of 1/2 a small lemon



METHOD:

1. Heat the olive oil in a frying pan then add the garlic and shallots.

2. Fry for a few minutes, stirring regularly.

3. Remove the frying pan from the heat. Add the chopped tomato and lemon juice to the pan.

4. Spread the mix onto the sliced Vienna bread and sprinkle with a little Basil.

5. Place the slices under a Grill on medium heat. Once the bread starts to appear toasted, remove from the Grill and serve immediately.
