Recipes: Spaghetti bolognese

Vegetarian Spaghetti Bolognese

Spaghetti Bolognese is an Italian dish which is enjoyed all around the world. This dish can be made in a variety of ways and the recipe is often edited for each individuals preferences. The preparation for this dish takes around ten to fifteen minutes and the cooking time takes around fifteen to twenty; making this a very fast, healthy and cheap dish for busy families.

For this recipe you will need:

2 green peppers

1 onion

Olive or Sunflower oil to cover the pan

100g mushrooms (more if desired)

A packet of long pasta

A Bolognese sauce of your choosing


Read the instructions on the back of the pasta to see how much water you are meant to use. When you have put the water into the pan, turn the heat up to full and wait for the water to boil.

Cut the top and bottom from the peppers whilst you wait for the water to boil. Then deseed them and cut the pepper in half vertically. Cut the pepper into strips and then into smaller pieces of your choosing. Put these on a cutting board or side out of the way so that you can move onto the next step.

Top and tail the onion and peel the skin from it. Cut the onion in half and into smaller pieces. If the onion is small then find another small onion to cut and prepare, unless you decide that the small onion is enough for you. The amount of each ingredient really depends on personal preference and how you like to have your food prepared.

When cutting the mushrooms you have a few choices; you can cut them into thin slices, cut them in half, or cut them into quarters. This choice is down to how thick you like your mushrooms when you eat. For Bolognese I cut them into quarters, however when I cook rice I would cut them into thin slices.

Add the olive or sunflower oil to a non stick pan. There should be enough oil to cover the bottom of the pan completely. Warm the oil up on full heat until it starts to speckle. At this point you should wait until the water in the other pan is boiling.

When the water is boiling then turn it down a little whilst you add the pasta. Ensure that all of the pasta is completely covered by the water, with none of the pasta sticking from the water. If the pasta is out of the water for too long it may become hard and taste raw or crunchy. You can add salt to the pasta if you would like, but this isn’t a necessity.

Turn down the heat of the oil to around medium so that you can add the peppers. It is important to time this step as the peppers should be in the oil on medium
