I just love "Dark Chocolate; Chocolate Chip Cookies" I make a variation which tastes great but uses some ingredients that are a little better for you. This way I can eat as many as I want but I don't feel as guilty! This recipe makes about 4 dozen soft chewy cookies.
Ingredients:
1/2 Lb Butter
1 1/2 Cup sugar
1/4 Cup Molasses
1 Vanilla Bean Seeded(or 1 1/2 Teaspoons Vanilla Extract)
2 Lg Eggs
2 Cups Extra Dark Chocolate Chips(60% cocoa or more)
2 1/2 Cups Wheat Flour
1 Teaspoon Salt
1 Teaspoon Baking Soda
Preheat oven to 325. In mixer cream together butter, sugar, and molasses. In a separate mixing bowl combine all dry ingredients; wheat flour, salt, baking soda, and dark chocolate chips. Add vanilla bean seeds or extract and eggs to butter mixture, mix just until incorporated (do not over mix this makes the cookies, cake like in texture). Add 1/3 of the dry mixture at a time to the wet, mixture mix just until incorporated. Drop about 1 tablespoon of the cookie dough onto a sheet pan you should get 6 to 8 cookies per sheet pan. Place in oven, after 7 minutes turn the pan and cook for another 7 minutes, for a total of 14 minutes bake time. The cookies are done when they are golden brown around edges. If you like crisp cookies bake for 3 to 5 minutes more. Let cool completely before serving (like thats gonna happen!).
