My recipe for Spaghetti Bolognese
Feeds 3 - 4 people
You will need:
A wok or large frying pan
A large saucepan
A chopping board
A vegetable knife
A garlic crusher
A wooden spoon
A splatter guard (Optional)
Ingredients:
500g leaned minced beef (Or Quorn, pork, lamb etc whichever you like)
1 medium onion, chopped
1 medium pepper (doesn't matter what colour)
A handful of mushrooms, peeled and sliced
3 large tomatoes or 1 jar of chopped tomatoes
1 oxo cube (Again which flavour you prefer)
3 - 4 cloves garlic (Or you can add more or less, depending how much garlic you like)
Dried mixed herbs (to taste)
1 tsp nutmeg (optional)
A splash of lemon juice (optional)
1 tsp tomato puree (optional)
1 500ml jar original Dolmio
8 - 10 handfuls of pasta ( We don't use spaghetti)
Cooking method:
1. Drizzle olive oil into your wok, and place your wok on the simmer hob (it's usually the smallest one). Put the hob on a high heat and add your mince being careful to break it up with your spoon and then put the splatter guard (SG) over it. This will usually take between 5 and 10 minutes to be completely browned.
2. Whilst your mince is browning, cut the top off the onion and peel the skin off. be careful to leave the roots on as this helps to stop your eyes watering (except in the case of really strong onions). Slice the onion until you get to just before the roots then dice them up into cubes.
3. By the time you have cut up the onions the meat will be simmering away. Reduce the heat to the lowest setting while you crumble in an oxo cube (this helps with any meat that has stuck to the pan and also stops the fat spitting at you).
4. Once the oxo cube is crumbled in add the onions and mix them in, then recover with the SG and turn the heat back up, this time to a medium heat.
5. While they are cooking, cut up your pepper, taking care to remove all the seeds and the stalk, first cut it in half, remove the seeds, then slice both halves and then dice them, once this is done, remove the splatter guard, add the peppers and stir in. Once it is stirred in replace the SG. Leave it at a medium heat.Now it's time to peel and slice your mushrooms, once they are peeled and sliced, add them to the pan, stir, and recover with the SG.
6. Once you have done that, cut up your tomatoes, taking care to remove the green in the middle. Then dice the tomatoes up as small as possible. This will be messy and there will be juice from the tomato on the chopping board. Once this is done, repeat
