Mashed Potato Stuffed Hot dogs
It's Friday evening; you're tired and the kids are hungry. It was a long week and you really don't feel like cooking a big meal. You could order pizza, again; but tonight you want to do something different.
After looking in the refrigerator and seeing a package of wieners, you remember a childhood favorite, mashed potato stuffed hot dogs. Even though you don't have a recipe, you decide to make them anyway. You can make them quickly and heat up a can of green beans to go with them.
You pull out the wieners, mustard, cheese, and leftover mashed potatoes. Luckily, there are a couple of cups of potatoes, as you'll need about a quarter of a cup for each dog.
You put the potatoes in the microwave to warm through. After putting the dogs in a pan of water to heat up, you cut slices of cheese, one for each serving.
When the ingredients are ready, you carefully cut a slit in each hot dog; you are making a pouch along the length of the dog, not cutting them in half.
After gently squeezing each of the hot dogs to open the pocket, you spread the inside with some yellow mustard.
Taking a generous dollop of the potatoes, you stuff the pouch, firmly packing the potatoes along the entire dog and making a mound on top.
You then place a slice of cheese on each serving and set them on a broiler pan.
You set the pan under the boiler and let the cheese melt and brown slightly, careful not to burn them.
After calling the kids to the table, you sit down to eat. It's been less than an hour and supper is done. You smile to yourself because you can relax; the rest of the night is yours.
