Quick meals for busy families

Who isn’t running around like crazy these days?  The easiest thing would be to grab some fast food and eat in the car….again….but if you are really trying to not spend as much and want more nutrition than a burger and fries for your family, here are some quick meals.

1.Mac and cheese with hot dogs.   Serves 4-5

Ingredients:

1 large box macaroni and cheese

4 hot dogs

Make the macaroni and cheese per directions.  While the pasta is cooking, cut up hot dogs, microwave about 4 to 5 minutes.

Mix hot dogs into mac and cheese. 

Have a veggie on the side.

2.  Hot tuna fish sandwiches   Serves  5

Ingredients:

1 L. can tuna; drained

¾ c mayonnaise

½  chopped onion

½ c. shredded cheese

Salt and pepper to taste

Mix all ingredients .  Spoon onto hamburger buns

Bake at 350 degrees for about 10 minutes until hot.

Serve with raw baby carrots and ranch dressing for dipping

3.  Oven barbecue chicken  with baked potatoes.  Serves  5

Ingredients: 

5 boneless skinless chicken breasts

Barbecue sauce

Lay chicken breasts in single layer in glass casserole dish

Cover chicken with barbecue sauce

Bake at 350 degrees for 30-35 minutes until inside is no longer pink

While chicken is cooking, wash and microwave 5 whole baking potatoes on 100% power for 20 minutes until fork-done.

Serve with salad or other vegetables

4.  Taco soup with rolls.  Serves:  6

Ingredients: 

1 lb. ground beef

1 can red kidney beans

1 can black beans

1 can diced tomatoes

1 can chili beans

1 can corn

1 small onion

1 pk. Dry taco seasoning

1 pk. Dry ranch dressing mix

Brown ground beef and onion.   Drain

Mix in all other ingredients without draining cans

Add more water if too thick

Heat to boiling, simmer about 10 minutes

While soup is heating, bake rolls per directions

Serve with salad if desired.

5.  Smoked sausage, rice, and tomato casserole.  Serves: 5-6

Ingredients:

1lb. smoked sausage

2 cups instant rice

I large can diced tomatoes

1 small onion, chopped

2 c. shredded cheese

Hot sauce, if desired.

Slice smoked sausage.  Saute in small amount of oil w/onion until hot

While sausage and onion is cooking, prepare instant rice per directions

Combine rice, sausage, and onion w/tomatoes (not drained) and hot sauce to taste

Layer cheese on top

Bake at 350 degrees for about 20-30 minutes until bubbly and cheese is melted.

Serve with salad, raw vegetables or steamed veggies.
