Baked Potato Casserole
6 medium cubed potatoes (pick your faves)
1/2 tsp salt (sea salt will work fine)
1 tsp black pepper (fine or coarse)
1 1/2 tsp Emerill's Bam it Seasoning
3 tbsp butter or margarine divided
6 pcs. cooked bacon (crumbled)
1 lb. broccoli (fresh or frozen)
1 lb. shredded cheese (put your fav)
In a large bowl, combine potatoes, salt, pepper, Emerill's seasoning until evenly coated. Place potatoes in 13x9 baking dish and place the butter on top. Bake at 350 degrees for 1 hr with foil on top. After an hour, take foil off, top with broccoli, bacon and cheese and bake for another 1/2 hour or until potatoes are done. Serve and enjoy!
Could be a meal by itself or with any meat dish. Very nice dish to bring to a pot luck.
