Traditional foods eaten on Good Friday

Good Friday is the day when Christians around the world remember the crucifixion of Jesus.  In memory of that day the consumption of beef, pork, chicken, turkey or any other type of meat is not allowed.  Luxury seafood dishes such as crab, lobster and shrimp are not permitted either.  To provide protein, meat is replaced by fish dishes, eggs and beans.

HERRING IN SAUCE

For a family of four you will need:

-          4 large herrings (cleaned and deboned)

-          1 onion (sliced into rings)

-          Salt, pepper and bay leaves

-          150 ml malt vinegar

-          150 ml water

Sprinkle the fish with salt and pepper.

Roll up the fish and secure with a wooden cocktail stick.

Place the fish in a shallow ovenproof dish and add the onion rings and bay leaves.

Mix the vinegar into water and pour it over the fish.

Cover with a lid or foil and bake in the oven at 350 degrees F until tender.

This fish can be enjoyed hot or cold.  Serve with boiled potatoes, potato fries or rice and salad.


POTATOES IN ONION SAUCE

For a family of four you will need:

-          Four large potatoes

-          One large onion

-          One tin of baked beans

-          Four eggs

-          Butter or olive oil

-          Half a cup of water

-          Sauce thickener

-          One teaspoon of vinegar (optional)

Peel, wash, cut and boil potatoes.

Boil eggs to personal preference.

Cut the onion into thin rings and fry them in a pan with butter or olive oil.  When brown cover them in water and let the onion rings stew until soft.  When most of the water has evaporated, add the baked beans and stir.  Add sauce thickener to bind the sauce.  Add vinegar.

Alternatively you can use baked beans in tomato sauce.


SCALLOP POTATOES IN ONION SAUCE

For a family of four you will need:

-          Four large potatoes

-          One large onion

-          Four pieces of white fish

-          Butter or olive oil

-          Half a cup of water

Peel, wash and cut the raw potatoes into thick slices and fry them on a pan.

Slice the onion in thin slices and add them to the potatoes.

Continuously stir the potatoes and the onion rings until golden brown.

Add water to stew until soft.

Fry or boil your choice of fish and serve with the mixture.

Alternatively you can serve this dish with boiled eggs instead of fish.
