Simple Easy Meatloaf
This is a very quick main dish to prepare when your at your favorite camping spot. Another tasty thing to serve with the meatloaf is camp fire potatoes. Slice a few potatoes thin and also slice up some onion, mix them together well in some salt and pepper. Add a bunch of butter and double wrap them with aluminum foil. Cook the potatoes on the edge of the fire or in the pan next to the meatloaf. It is always a tasty treat to bring along some sweet corn on your outing. Cook the sweet corn in the husks right in the fire. When you husk it after it cooks and put on lots of butter your eating in campers heaven.
Here is your receipe for basic, simple and easy stove top meatloaf. This meatloaf can be mixed together in minutes and cooked in a covered frying pan or Dutch oven. The cooking time will depend on your fire but probably twenty or thirty minutes, don't rush it. You can prepare this meatloaf over a campfire by your tent or on the stove in your $90,000.00 dollar camper.
Ingredients:
1 lb. 80% lean hamburger
1 small onion, diced small
1 egg
1 tsp. coriander powder
1/4 tsp. each of salt & celery salt
1/4 tsp. pepper
8 Tbsp. ketchup
12 soda crackers
1. Place the crackers in a large zip lock bag and smash up the crackers into crumbs with your hands.
2. Put the spices and onions into the bag with the cracker crumbs and shake it all together.
3. Add the egg and hamburger.
4. Seal the bag and mix it all together well and then form it into your loaf.
5. Take the loaf out of the bag and place it on a greased double layer of aluminum foil.
6. Spread the ketchup on top of the meat and fold the foil around the loaf and close it at the top so you can open it later to check when it is done.
7. Place the foil wrapped meatloaf in the pan with some water to keep it from sticking. Cover the pan and check often to make sure the pan doesn't go dry.
If you have more hungry campers show up, just increase the ingredients accordingly. When you get home from your camping trip and have a large spice rack at your finger tips you can experiment with a more exotic meatloaf.You might just stay with this simple easy meatloaf.
