2 Minute Chocolate Cake

This recipe is very quick and easy to make and is very special to me. My Grandmother used to bake this cake when I was a little girl. She would fill it with mock cream and cover it in chocolate icing. My sisters and I would often fight over who got to 'lick the bowl' while we waited for the cake to bake. After her passing I was lucky enough to inherit her recipe books and now I make this recipe for family parties. It's like having my Grandmother there. It is a great recipe to make with children. My own son loves to get involved.


Ingredients:

1 cup self raising flour

3/4 cup sugar

1oz butter

2 dessertspoons cocoa

3/4 cup milk

1 egg

a couple drops of vanilla essence


Method:

1.   Sift flour and cocoa. Add sugar.

2.   Make a well in center and add melted butter, unbeaten egg, milk and vanilla.

3.   Beat mixture for 2 minutes.

4.   Pour into a greased cake tin and bake in a moderate oven for 25 minutes. (I have to bake the cake for about 45 minutes but I think this is because of an issue with my oven. Adjust the time to suit your oven.)


This cake can just as easily be made into cupcakes. Instead of pouring the mixture into a cake tin use patty pans and adjust the cooking time accordingly. It works really well as little chocolate butterfly cakes. Just cut the top out, fill with cream and after cutting the top in half, place them in the cream as little butterfly wings.

I have also experimented with adding chocolate chips. This tasted great except the that the chocolate chips sank to the bottom of the cake.
