This recipe is an easy chicken and dumpling recipe that can be made in little time. I started making this with almost no counter space, as a poor college student, with very little money. This is by far the easiest recipe for this I have come across and only costs a few dollars. This particular recipe will make 8 dumplings, perfect for dinner and lunch the next day for 2 people
What you'll need.
1 Can Cream of Chicken Soup
1 Can Golden Mushroom Soup
2 Cans water
1 Pkg Mixed veggies (optional, but adds flavor, nutrition and texture)
1 Roll Buttermilk Biscuits
2 Large chicken Breasts
Any spices you enjoy. I usually use the following but change it up with my mood.
Garlic
Minced Onion
Celery Flakes
I use enough spices to cover the chicken while cooking, leaving out the celery.
When cooking the chicken preheat oven to 375 degrees. Once heated, place the chicken along with the spices into the oven for 45-60 min depending on thickness.
Once chicken is done cooking, shred (or dice if you prefer) and place into a bowl.
Now is the time to throw in the celery flakes. The amount for this will vary person to person.
Mix, cover and let sit while you prepare the biscuits.
Take the biscuits and separate from each other. Roll them all out to 3-4in circles.
At this time take a large pot, throw the 2 cans of soup, and the two cans of water into it. Let it heat up while your preparing the dumplings.
Now fill the biscuits with the chicken mixture. This is usually about a tablespoon but should be enough to fill the biscuits while still allowing them to be sealed.
After filling, fold the biscuit over, making a pocket with the chicken mixture inside.
You can take a fork and press the edges depending on how fancy you would like to get.
Once your done filling your dumplings, check on your soup mixture. It should be at a slow boil now and the soups should be combining nicely. If you have any extra chicken mixture throw it in first then put your bag of veggies in.
Allow this mixture to cook at a nice even boil for about 3-5 minutes stirring constantly, making sure not to burn.
Now take the dumplings and put them into the pot. Your heat should now be on 6-7.
Cover and let boil, making sure to stir occasionally.
The dumpling done time will vary depending on the biscuits you used but usually takes 5-7 minutes.
You'll know there done when they puff up (about twice the size) and when you can cut into an area and it looks like a biscuit.
Take off the heat and let sit for about 5 minutes. This will allow everything to mix and the soup to firm up a little.
Now your ready to serve!
Place 2-3 dumplings in a bowl and spoon/ladle in soup around it.
