Strawberry is one of the classic cake flavours besides chocolate. Strawberry cake is a favourite choice among girls and ladies because of its colour and taste. Moreover, strawberry is a lighter alternative compared to richer flavours such as chocolate and banana.
Recipe for Strawberry Fresh Cream Cake
Ingredients :
5 eggs
100g castor sugar
2 tablespoons self-raising flour
1 1/2 teaspoons vanilla essence
100g plain flour
20g cornflour
125g melted butter
Method :
1. Whip the eggs and castor sugar in a electric mixer for ten minutes using high speed till creamy white and fluffy.
2. Add in the self-raising flour and vanilla essence. Mix thoroughly.
3. Sift the plain flour and cornflour together. Add them to the egg batter in one direction using a wooden spoon.
4. Add in the melted butter and mix well. Line a 26-cm diameter round baking tin with greaseproof paper. Pour the batter into the baking tin. Bake in a pre-heated oven at Reg. 5-6 for gas oven or 350 deg F or 175 deg C for electric oven. Bake for 25 to 30 minutes. Remove from the oven, cool and slice into 2 halves.
Ingredients for Strawberry Fillings
250ml water
60g castor sugar
150g gelatin powder (jelly powder)
250g fresh cream
250g fresh strawberries, chopped
12 pieces of fresh strawberries
Method for making the strawberry fillings :
1. Bring the water to a boil, add in the sugar and gelatin powder. When the sugar and gelatin powder are dissolved, remove from the heat and allow to cool.
2. Whip the fresh cream in high speed till it is 2 to 3 times its original volume. Add in the half solidified gelatin mixture.
3. Add in the chopped strawberries, mix well. When it is about 90% solidified, sandwich it between the 2 slices of cake, spreading evenly. Refrigerate the whole cake until the fillings hardened.
4. Decorate your finished cake with the whole strawberries and some more whipped cream as desired.
