Recipes: No-bake holiday desserts and treats

When I was a young boy, my mother baked Haystack cookies every Christmas. These delicious no-bake confections are perfect for a Christmas snack.


Ingredients:


One (1) 16 oz. bag of butterscotch morsels

One (1) 12 oz. bag of chow mien noodles

1 and a half cups peanut butter

3 cups marshmallows

1 large bar of Hershey's chocolate


2 baking sheets with wax paper

Fridge or freezer


As with any recipe, the ingredients are slightly negotiable. The Haystacks can be made with any kind of morsels, and the amounts of peanut butter and marshmallows can be adjusted to taste. As a suggestion, try butterscotch the first time, and then see if there are other kinds of morsels that you prefer better.


Making the Haystacks:


To start, melt the bag of morsels in the microwave, mixing them until they are entirely melted. Once that is done, add the peanut butter and mix the two well. Then proceed to mix in the chow mien and marshmallows. There should not be any peanut butter and butterscotch mixture left once the noodles and marshmallows are mixed in. If there is any of it left, add more marshmallows until all of the mixture is clinging to the noodles and marshmallows.


After you have done this, next comes the fun! Using a spoon, scoop the mixture out onto your baking sheets. You can make the haystacks whatever size you prefer, but two to three scoops makes them decently sized. After you have them spooned out onto the baking sheets, break the Hershey's bar into its individual bars and break each of those in half. Put one on each haystack.


Put the baking sheets into the fridge or freezer. If they are in the fridge it will take about 30 minutes for them to harden, while the freezer should only take about 15 minutes.


They are sweet and they are delicious. Haystacks are a perfect holiday confection.
