Recipes: Taco soup

Taco soup is the perfect meal to serve on a cold winter’s night. This flavorful soup can warm the pickiest taste buds plus satisfy the hungriest family member at the same time.  Not only is this spicy soup delicious, it’s super easy to make. Most of the ingredients can be stored in your pantry for a quick, throw together meal after a long work week.  Serve Taco soup at the next football party, birthday bash or family get- together.  Whenever you choose to serve this great soup, it will surely become everyone’s favorite no matter what the season.

Taco Soup

One pound of hamburger

One large onion, chopped fine

Three (15.5 oz.) cans of Mexican-style chili beans, undrained

One (15.5 oz.) can of whole kernel corn, undrained

Two (15.5oz.) cans of tomato sauce

Two (14.5 oz.) cans of diced tomatoes, undrained

One (4.5 oz.) can of chopped green chilis

Two envelopes of taco mix *

One (1oz.) package of ranch salad dressing mix (envelope)

One and one- half cups of water

Toppings: Fritos corn chips, sour cream and grated cheddar cheese

1. Cook hamburger and onion together in a large soup pot until completely browned. Drain well.

2. Add remaining ingredients and bring to a boil. Reduce heat and simmer on low heat uncovered for 15 minutes.

3. Spoon into bowls. Top with grated cheddar cheese, a dollop of sour cream and a handful of Fritos corn chips. Delicious!

Serves eight to ten people


*Homemade Taco mix recipe-

2 tablespoon of cornstarch

2 teaspoon of chili powder

1 teaspoon of salt

1/2 teaspoon sugar

1 crushed chicken bouillon cube

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon of cayenne pepper

1/4 teaspoon cumin

 This taco soup recipe is super easy to prepare. Most of the ingredients can be stored in the panty so you can throw together a batch of soup in no time flat. Why not warm up your taste buds with some Taco Soup tonight?
