Chicken wings are the perfect food for potlucks and football watching parties. Since guests vary on whether they prefer their wings spicy or mild, it's ideal to serve wings that are good enough plain but allow guests to choose their own sauce. In honor of the Dr. Pepper sponsorship of the 2009 Big 12 Championship football game, my husband came up with this recipe, which he calls "Doctored Wings." They have an amazing flavor and are positively addictive.
Doctored Wings
Ingredients:
4 lbs. fresh or frozen chicken wings
2 medium onions, coarsely chopped
1/3 cup salt
2 liter bottle of Dr. Pepper
Greek or Cajun Seasoning
Place wings, onions and salt in a Dutch oven. Pour in Dr. Pepper until wings are covered (a little over half the bottle). Turn to high heat and bring just to a simmer. Cover and reduce heat to simmer for 45 minutes, stirring occasionally. With a pair of tongs, remove the wings, and shake off excess liquid. Liberally shake seasoning on both sides of wings. Place wings on an oiled grill and cook on high heat for 2-3 minutes on both sides. Watch them closely on the grill, because the sugar content can scorch. Remove from grill and place on serving tray.
These wings can be served with your favorite wings sauce: barbeque, Buffalo sauce, ranch, or blue cheese. They are also tasty enough for picky children who prefer to eat them plain. Carrot sticks, chips and ranch dip make the perfect accompaniment. The following are some easy to mix sauce suggestions.
Hot Barbeque Sauce
1 part Louisiana hot sauce
1 part BBQ sauce
Hot Blue
1 part blue cheese dressing
1 part Louisiana hot sauce
Classic Buffalo Sauce
1 part butter
1 part Louisanna hot sauce
Place both ingredients in a small sauce pan and stir over medium-low heat until melted and thoroughly blended. Remove from heat.
