This is my recipe for "The Perfect Cheesecake:Orange Cream Flavored". It is the best cheesecake I've ever eaten it's smooth and creamy and tastes absolutely fabulous. It is so quick and easy to make. This cheese cake is restaurant quality and it looks just as good as it tastes. As I've said before I have a large family so my recipes tend to be large too, this recipe makes 1 10" or 2 6" cheesecakes. I'm sure you're family and friend's will enjoy it as much as my family does.
Ingredients:
Filling;
3 Lbs Cream Cheese
2 Cups Sugar
2 Cups Sour Cream
8 Lg Eggs
2 Tablespoons Corn Starch
2 Tablespoons Orange Zest
1/4 Cup Frozen Orange Juice Concentrate(thawed)
Crust;
2 cups Graham Cracker Crumbs or Oreo Cookie Crumbs
1/2 cup melted butter
Garnish;
2 Cups Whipped cream
1 Can Mandarin oranges or 1 Fresh Orange Sectioned
You will also need:
1 10" cake pan (not spring form)
1 2" deep roasting pan (for water bath)
Preheat over to 300. In a mixing bowl add graham cracker crumbs or Oreo cookie crumbs and the melted butter, mix thoroughly then press into 10" cake pan, set into roasting pan. Make sure cream cheese is at room temperature, this will help minimize lumps. In a mixing bowl, cream together cream cheese and sugar, don't over mix but make sure there are no lumps. Scrape down the sides of the bowl then add the sour cream and corn starch, mix thoroughly. Add the eggs and the orange zest mix just until blended. Do not over mix! or you will get to much air into the batter and your cheese cake will rise, then fall causing cracks and a sunken cake. Next add the orange juice concentrate, mix just until incorporated. Pour the filling into the crust. Put the cheese cake into the oven, fill the roasting pan up half way with cold water and bake the cheese cake for 1 to 1 1/2 hours. When done the cake should have a little jiggle in the middle but should be mostly set and lightly browned (almost white) on top. Let cool completely overnight. Remove from pan by gently loosening the sides and placing a flat piece of card board covered in plastic wrap on top of cake and flipping over onto cake dish, garnish with whipped cream and mandarin oranges.
Variations:
Take out 1/3 of cheese cake batter and flavor with melted chocolate, raspberry preserves, or Kahlua then swirl into rest of cake before baking. Also you could sprinkle in chocolate chips, nuts, or fruits (dried or fresh). Your only limit is your imagination!
