Most popular Hanukkah foods and recipes

Hanukkah, like most holidays, is laden with delicious treats for everyone to splurge on. Most notably during this celebration of light, foods are fried in oil to represent the oil that burned for eight days in the Temple at Judea. While some of us may cringe at the idea of the calories consumed, if we look beyond that to the religious meaning behind the frying (not to mention the deliciousness), it's easy to spend our days in the kitchen coming up with these treats!



Some of the most popular dishes during Hanukkah include latkes (fried pancakes), sufganiyot (doughnuts), fried apple fritters, and cheese blinzes. With so many variations, it's hard to pick only a few to share! Hopefully, out of this small assortment you can find something that everyone in your family will love.


Traditional Latkes

5 large potatoes
1 large onion
3 eggs
1/3 cup flour
1 tsp. salt
1/4 tsp. pepper
3/4 cup oil for frying

Yields 4-6 servings.

1. Grate potatoes and onions using the fine side of the grated, in a food processor, or in a blender.

2. Strain grated potatoes and onion, pressing out as much water as possible. Add eggs, flour, and seasoning; mix well. Heat the oil in a 10 inch skillet on low heat, adding a pat of butter at a time. Fry each latke for 5 minutes on the first side and than an additional 2 to 3 minutes on the other.

3. Remove latkes from pan and place on a paper towel to drain excess oil.

*Variations: Instead of potato, use 5 medium zucchini or carrots.




Cheese Latkes

1/2 cup soft cream cheese (4 ounces)
2 eggs, seperated
1/2 cup flour
1 tbs. Sugar
1 cup cottage cheese
1/2 tsp. salt
Cinnamon to taste

Yileds 30 latkes.

1. Mix cream cheese with egg yolks. Add sugar and cottage cheese. Add flour in slowly and mix well.

2. Beat egg-whites until stiff and fold into cheese mixture.

3. Heat oil in pan and drop mix in my the spoonful. Fry until brown and flip.



Apple Latkes

2 eggs, well beaten
1 1/2 cups orange juice, yogurt, or milk
2 cups all-purpose flour
1 tsp. baking powder
Dash of salt
1/4 to 1/2 cup sugar to taste
3 medium apples peeled and grated
Oil for frying
Confectionary sugar

Yields 36 latkes.

1. Mix eggs with orange juice, yogurt or milk in a bowl.

2. In a separate bowl, combine the flour, baking powder, salt and sugar.

3. Add dry ingredients and grated apples to the egg mixture.

4. In skillet, heat a thin layer of oil. Drop 1 heaping tablespoon of batter into the oil. Cook for about 2 minutes on each side or until golden. Drain on paper towels and sprinkle with confectionary sugar.
