There's no end to the wide variety of gourmet vegetarian sandwiches one can prepare. It is only limited by one's imagination. The fillings, breads, and condiments can be concocted into delicious and nutritious sandwiches for yourself and for serving to company. Being a vegetarian myself, I am always looking for new and interesting sandwich combinations.
Gourmet vegetarian sandwiches can be simple or complex. Sometimes the simplest are my most favorite.
Avocado and Provolone On Ciabatta - Slice the Ciabatta bread in half and lightly spread each half with mayonnaise. Thinly slice a ripe Avocado and place half of the Avocado on one side of the bread. Salt and pepper well. Place a layer of Provolone cheese on the Avocado. On the other slice of bread, add some thinly sliced red onion. Place both halves under the broiler until the cheese is melted. Put the two halves together and slice sandwich in half. Serve with a sour dill pickle and a tossed salad.
Sun Dried Tomato and Fresh Mozzarella - I use thick slices of French bread that have been lightly toasted. Layer the Sun Dried Tomato on one side of the bread. Slice the fresh Mozzarella on top of the tomato. Add onion and lettuce. Serve with sweet potato fries.
Mushroom and Cheddar Wrap - Saute your favorite mushrooms in a very small amount of butter or oil. You can add onions to this if you like. Grate some of your favorite cheddar cheese, I use extra sharp New York Cheddar. Sprinkle the cheddar onto a whole wheat flour tortilla. Spread the mushroom mixture on the center of the wrap. Salt and pepper to taste. Roll wrap tightly. Serve with salsa.
Hummus and Baby Spinach - Use any of your favorite bread or wraps for this easy sandwich. Use the Hummus of your choice and spread on the bread. Layer the washed baby spinach on the hummus. I lightly dress the spinach with oil and vinegar before constructing the sandwich. Serve with raw carrots, radishes and celery.
Grilled Portabella Sandwich - Grill a portabella mushroom until done. With stem side up, place a wedge of Asiago cheese on the mushroom to melt. Lightly toast a sandwich roll and spread with mayonnaise. Place the mushroom on the roll, add condiments of your choice and you have an amazing hot sandwich.
