I believe the key to using leftovers is to be creative but not "creepy" one of my favorite ways to use leftovers is in soup. For example; left over BBQ chicken becomes "BBQ Chicken Soup" it's a big hit. I have a large family so I apologize if my recipe is also large, this recipe feeds 7-10 so have a party! The recipe is as follows;
Ingredients:
8 cups Chicken stock or broth
2 1/2 cups BBQ Chicken diced
1 Green pepper diced
1 cup Corn (frozen or fresh is best or perhaps the leftover corn on the cob from the BBQ)
2 cups Tomatoes diced (fresh or canned)
1 medium Onion diced
2 cloves Garlic minced
1 16oz can Black beans
1 cup BBQ sauce
1 tablespoon Hot sauce
1 tablespoon Molasses
a dash liquid smoke (optional)
Salt and Pepper to taste
This is one of the easiest recipe's I have and you don't have to fuss over it. Take all ingredients and place in a 12 quart stock pot or crock pot, for best results simmer on low heat for 4 hours stirring occasionally. Soup will get thicker the longer you cook it.
If your in a hurry, cook soup on high heat for one hour stirring frequently. Once the soup comes to a boil be careful not to burn.
