"Gooey Smores Cookie Bars" This is an all American camp fire treat that every child remembers as there favorite dessert and it just got better. You've got to try these Smores Bars, they are just wonderful (though not as messy as the original camp fire ones)!
Makes 24 cookie bars
For the crust:
1 cup Flour
1 1/2 Sticks Butter
1/4 cup Sugar
1/4 teaspoon Salt
For the topping:
1 bag Mini Marshmallows
1 pound Semi Sweet Chocolate Chips
1/4-1/2 cup Honey
You will need:
1 9x13 Sheet pan
1 Mixer or food processor
2 Mixing bowls
Preheat oven to 325. In a mixing bowl add all dry ingredients for crust flour, sugar, and salt mix thoroughly. Slice butter into cubes and and to flour mixture, mix in mixer on low speed until it forms into makes a dough that holds together. Spread dough out evenly onto sheet pan, place in oven for 10 min. turn pan then return for another 10 min. or until lightly browned. Do Not over cook as it will be cooked again. While the short bread cookie is cooking, mix the Chocolate chips, mini marshmallows, and honey together in a mixing bowl. I find it is easiest to mix this mixture with your hands. When the shortbread is done, add the topping and put the bar back into the oven for 5 min. then turn the bar and put it back in for about 5 more minutes. The marshmallows should be golden brown and slightly puffy when done, let the smores bars cool completely before cutting them or it will be really messy (just a warning, not that you'll be able to resist!).
