Thanksgiving dinner for two is very simple.
I have done this a few ways so I will give you the best of my thanksgiving dinners for two.
Cornish game hens make a great alternative to the full turkey, although that depends also on whether you like myself love to have turkey sandwiches the next day.
Either way, with a turkey or cornish game hens you can still stuff them with amazing stuffing and make the dinner just like you would for many people. Hey let's fact it, it still is Thanksgiving.
A great stuffing mix is simple, just get some bread crumbs (they come in a box), some sausage, onions and chicken broth. Cook the sausage and onions, let cool some add bread crumbs and mix. Add a little chicken broth to make it stick together and the stuff the bird. Use the remaining chicken broth for the basting of the turkey or game hens.
Between mashed potatoes, candied yams, corn, biscuits and the stuffed hen or turkey you are set.
Super mashed potatoes are cooked just like regular only add some sour cream, chives, bacon bits, garlic and cheese and you have the best mased potatoes ever.
Here is one great trick though. When it comes to the desserts, make two pies in one pan.
Say you want pumpkin and a pecan pie. You can use the same pan by putting a tinfoil divider down the middle. Cut your recipe in half and pour this into each half. They cook for about the same amount of time and it looks great. Layered deserts are also perfect for the smaller group of two.
Make a pumpkin pie, let it cool then make the topping as a cheesecake, this combo is fantastic.
The great thing with just two people is the savings.
You can make your own cheeseballs by adding cream cheese, ricotta cheese and rolling these together and then rolling them into nuts. Tastes fantastic.
Yams can come directly from a can, just add some butter, brown sugar and marshmellows on the top and bake. Delicious!
Or you can slice fresh yams or sweet potatoes put them in a baking pan with butter and brown sugar and let them bake. Very good!
With just two people you can really make it romantic also, with lots of candles, a little wine, some soft music and make a great day with each other. Dance and enjoy the aroma's cooking around you and enjoy your holiday!
