How to prepare fondue

A fondue party is a great way to gather a small group of family or friends around the dinner table for a night of dining and entertainment. Here are some ideas for a three course fondue that is sure to fill the evening with laughter, warmth, and a celebratory atmosphere.

Appetizer: Cheese Fondue


Equipment

Ceramic fondue pot with base and skewers

Heat source such as Sterno, alcohol burner, or candle



Recipe

pound of aged, dry Swiss cheese diced into small cubes

cup of dry white wine

1 tablespoon of flour

clove minced garlic clove

tablespoon of lemon juice

Dash of salt

Dash of white pepper



Offerings

French bread cut into 1 inch squares and toasted

Whole wheat bread cut into 1 inch squares and toasted

Rye bread cut into 1 inch squares and toasted

Hard dinner rolls cut into 1 inch squares and toasted

Green pepper cut into 1 inch strips

Red pepper cut into 1 inch strips

Celery cut into 1 inch pieces

Carrots cut into 1 inch pieces

Whole mushrooms



How To

Slowly melt the cubed cheese over low heat (note cubed cheese melts better than shredded cheese). Mix the wine, flour, minced garlic, lemon juice, salt and pepper and heat over very low heat (do not boil or simmer the wine). Add the wine to the cheese slowly stirring in a figure 8 motion. When mixed remove from heat and move immediately move the pot to the stand and heat source. Each guest will spear one offering with a skewer and swirl the offering in the fondue in a figure 8 motion. A simple twist at the end of the swirl will help prevent dripping cheese. Be sure to have a plate for each guest as well as plenty of napkins.


Main Course: Hot Oil Fondue



Equipment

Metal fondue pot with base and skewers

Heat source such as Sterno, alcohol burner, or candle

Two plates and a fork for each guest



Recipe

This fondue simply requires peanut oil (due to the higher temperature tolerance)



Offerings

Chicken in 1 inch cubes

Veal in 1 inch cubes

Pork in 1 inch cubes

Beef in 1 inch cubes

Cocktail shrimp wrapped in raw biscuit dough

Whole mushrooms wrapped in raw biscuit dough

Green pepper cut into 1 inch squares

Red pepper cut into 1 inch squares

Onion cut into 1 inch squares



Dips

Bar-b-cue sauce

Sweet and sour sauce

Steak sauce

Cocktail sauce

Ketchup

Honey mustard


How To

Bring the oil to a boil on the stove. Place the dips into small dishes and spread them about the table along with salt and pepper. Carefully move the hot oil to the stand and heat source. Each guest will prepare a few uncooked offerings on a plate and skewer
