The fewer people that you have to hire means the less amount of money that you have to pay in payroll. This is the easiest cost to control, so you should take advantage of cross-training whenever possible.
It is also a good way to get rid of any employees that you might not want, or to find a better fit for them. Some people aren't good as cashiers, and they will do anything they can to get out of working on a register. It doesn't mean that they wouldn't be a good fit for another department though. Maybe they know a lot about produce, or enjoy stocking shelves. Why not move a disgruntled employee, and allow them to produce for you somewhere else?
Cross training is good because business is something that takes a lot of different learnings to master. You need to have a good service base, you need to have a good business base, and a feel for how the company runs things. An employee needs to have experience in distribution, sales, and other aspects of the business. Cross training allows an employee to get those different learning under their belt.
Whenever you cross train an employee, you are doing them a service. The company is also getting a service rendered to them as well, and help in not only multiple areas of operations, but in payroll savings as well.
