Dating tip: Faking your way through the wine list

There aren't many things more terrifying on a first date than hearing the waiter ask what kind of drinks you'd like to start with, then your date asks to see the wine list.  Sure you can panic and try to defer the wine selection to the person you're trying to impress.  Better than that tensing up, is politely thanking the waiter and accepting the wine list.  After that it is a good idea to find out what type of food your date is in the mood for.

While wine certainly has its complexities, there is are a few basic rules you can follow.  You really don't have to be a connoisseur of the grape to understand the intricacies of wine.  If you follow these guidelines then your date will appreciate the results.

First and foremost is this, wine should be paired with your main dish. For this reason it is a good idea to find out what your date is thinking about for their main course.  A very simple rule of thumb is match the color of the wine to the dish's sauce or the color of the meat.

If you are having a lighter meat (chicken, seafood, pork) the try choosing a lighter colored wine. chardonnays are usually a safe bet.  Those Pinot Grigio's often go nice with a pasta dish, such as chicken Alfredo.  Either way you are complementing the meal.  

If your main course is a darerk meat (beef, veal, duck) then choose a red colored wine.  Stick with a Merlot or a Cabernet Sauvignon.  These darker wines usually complement a wide variety of dark meats or red sauces such as ragu.  

It really is that simple. Of course if you are still undecided or have pared down your choices then ask the server what wine they recommend with your dinner, they will be more than happy to help you out.  I would recommend ordering a bottle, even if you know you aren't going to drink it all.  There is a certain romance factor when the waiter brings a bottle over to your table rather than two glasses of wine.

When the wine gets to your table you might be required to sample it to let the waiter know you approve.  Don't get to caught up in this, you are merely tasting the wine and either approving or disapproving.  Once a small amount has been poured, just take a whiff of the wine and then sip it.  The inhaling will aid in your tasting decision.  After you have sampled it, look at the waiter and say something to approve or disapprove and they will act accordingly.

Don't let the wine list scare you, spend more time with your date and getting to know one another.  Use these tips to help get you through the selection and the night will be off to a good start. Enjoy!
