Recipes: Easy banana bread

My Grandma Donna's Banana Bread, so quick, so easy, so DELICIOUS!

Grandma, a retired school cook for over 30 years was an amazing cook. That was back in the day when the schools actually served home-made, fresh- made food, not all prepackaged and "pop-top". She made the most delicious cinnamon rolls too. She would make them special just for the staff and me cuz I was her baby! People from Bellaire, Mi. will always remember her.

We miss her every day and I want to share this awesome recipe as a Thank You to her.

Another big plus to this recipe is that I always have the ingredients on hand. Simple yet so yummy. Your family will be begging you to make this all the time. Dont be surprised by how fast it goes either. It will be devoured.

My youngest daughter has extreme food allergies to all dairy, eggs and nuts so I just swap out the eggs for applesauce and dont add nuts. We use the "soy" butter instead of cow butter and its still a hit. Although, its still best with the ingredients listed.

Preheat Oven to 350 Degrees

1/2 Cup Softened Butter

1 Cup Granulated Sugar

2 Eggs

1 Cup Mashed Ripe Bananas (3 medium)

2 Cups Flour

1 tsp. Baking Soda

1/2 tsp. Baking Powder

1/2 tsp. Salt

1 Cup Chopped Walnuts (optional)

Cream butter and sugar together. Add one egg at a time, beating until smooth. Blend in mashed bananas.

In second bowl, stir flour with baking soda, baking powder, salt and nuts.

Add to the banana mixture stirring only to moisten *this is very important* do not over mix*

Transfer to a greased loaf pan.

Bake in 350 degree preheated oven for 1 hour.

Let stand 10 minutes.

Enjoy! This bread will make a nice addition to any meal as well as be the meal itself. So Good!

Great after school snack to hold 'em over til dinner.
