Recipes: Main course meat

This recipe is a simple one for a nice easy meatloaf. It doesn't require the skills of a great chef, and it is hard to wreck. You will need about ten minutes to put it together then just watch it bake for about two hours while you do something more fun.



Ingredients:

2-3 lbs of hamburger-2 lbs for 3-5 or 3 lbs for 4-6.
5 slices of bread
1/2 medium sized onion
1 tsp salt


1 tsp pepper
3 eggs
1/4 cup of flour



You will need a large mixing bowl and 9x13 baking dish.

Place all of the hamburger in the mixing bowl and make a depression in the middle of it. Add the three eggs the depression along with the salt and pepper. Tear the bread into pieces about 1 inch square and add to ingredients in the bowl. Precision is not required here. Chop the onion and add to the bowl.

Now comes the fun part. If you're squeemish, put on some clean latex gloves. Otherwise, using your hands work the ingredients together until every thing is well-blended. I prefer to line my baking pan with non-stick aluminum foil, but you can use a good non-stick pan or grease it up a little.

Empty the mixture into the baking pan and form into a loaf about 3 to 4 inches wide. It should look just a little flatter than tall. I sometimes make a valley at this point and hide three or four pieces of cheese in the meatloaf, but it isn't necessary.

Take the flour and dust it over the loaf until it is covered by a very thin layer. The juice from the hamburger will turn this into a crust. If you prefer, you can use catsup or tomato sauce or soup. I just don't happen to like them on top of my meatloaf, but many people do.

The oven should be pre-heated to 425 degrees. Bake for about 2 hours or until the load is slightly browned. Remove, slice, and serve hot.

It is good served as sandwiches when leftovers are available.
