To wow your woman this Valentine's Day, make up your mind to become a creative devil and bring something new to the table besides the old candy and stuffed animal.
A number of different things can be used to at least give the illusion that you've put some thought into this.

If you're going to take her out for a meal, make it a date and not just a, "well, it's Valentine's Day, so I guess I'll take you somewhere besides the kitchen to eat." Tell her about it a few days early and work to build it up to a special event.

If you plan to give her a big gift like jewelry, use this date as the opportunity to present it to her. Look into her eyes and express your undying love for her as you give it. She'll feel special for a change.

Find some ways to surprise her more than once. Send her flowers in the middle of the day. Get up early and have a light breakfast prepared for when she steps from the shower. If you can be home before she arrives from work, draw her a nice hot bath with some of her favorite bath oils. If she's a reader, have a romance novel for her to read for a while as she soaks. Put on some soft music and light some candles to set a mood.

If you want to drop a few bucks, you might make her an appointment at a day spa for an afternoon of pampering and a make over. You will want to have a sitter arranged so she doesn't come home to all of the problems that she forgot during the afternoon. An overnight at Grandma's or a favorite aunt might be a good idea in place of a sitter for the kids.

Special is the key word. Do everything to say to her this is a tangible way that I can express my love to you without uttering a word.
