How to prepare spicy tuna salad

If you like Mediterranean cuisine and are tired of the same old conventional tuna fish salad that you usually make, then you will find delight in this spicy tuna salad recipe with its hint of sweetness and slightly salty taste blended with seafood, fresh tuna steaks.


SPICY MEDITERRANEAN TUNA SALAD

Serves 6


Salad Ingredients:


5 medium sized red-skin potatoes (skin, peeled and cut into cubes)

3/4 pounds of fresh green beans (cleaned, trimmed and cut into 2 inch lengths)

3 (8 oz) thick tuna steaks

1 medium red onion chopped (3/4cup)

2 medium sized tomatoes (cut into wedges)

2 tablespoons cut fresh dill

3 teaspoons of capers (drained, rinsed and chopped)

1/2 teaspoon full cayenne pepper


Dressing Ingredients:


4 tablespoons red wine vinegar

2 cloves minced garlic

1 1/2 teaspoon Dijon mustard

1 teaspoon sugar

1/2 teaspoon Kosher salt

1 teaspoon cayenne pepper

3 tablespoons olive oil


1. Clean and scrub potatoes. Peel and cut into cubed. Put cubed potatoes in a large pot and cover with water. Cook over medium high heat for 2 minutes. Add green beans and cook for five more minutes or until tender, drain and rinse with cold water.

2. Finely chopped 1 medium red onion and set aside.

3. Cut two medium sized tomatoes into wedges and set aside.

4. Prepare dressing by placing the following in a small bowl vinegar, mustard, sugar,cayenne pepper garlic and salt, mix then add olive oil and mix.

5. Pre-heat broiler. Brush tuna steaks with olive oil. Sprinkle with cayenne pepper. Place in broiler rack and brush each side with dressing. Broil each side for 4 to 5 minutes until each side is lightly broil. Remove from broiler when fish is flaky. Cool tuna, then cut into cubes.

6. Place in a large bowl potatoes, green beans, tuna, tomatoes, red onion, dill, capers and remaining dressing. Toss gently and serve over a bed a fresh spinach with garlic bread or toast.
