Recipes: Quick mini-pizzas

Whether the busy schedule is your own or that of you spouse and children, it is always good to have something quick to prepare for a meal.

Since pizza is one of the most favorite foods in many households, let's capitalize on this and look into some fast and tasty ideas to serve at the table.

For all the recipes you will need pizza sauce and toppings, therefore, the only ingredient listed under each mini pizza idea will be the type of crust needed.

Flaky Crust Pizzas

1 can croissant dough

Preheat oven to the temperature listed on the can.

Open the can and unroll the dough making sure to split every two croissants, giving you a square shape.

Top with pizza sauce and favorite toppings

Bake for the time listed on the can

Given that each can has eight croissants, this recipe will yield four mini pizzas.

Sandwich Bread Pizzas

4 slices of sandwich bread (white, wheat, white wheat)

Preheat oven to about 300F

Lightly toast the bread, so the sauce will not soak through

Top with pizza sauce and toppings

Bake until cheese has melted

French Bread Pizzas

1 loaf of French bread

Preheat oven to about 300F

Slice the bread lengthwise and then cut in half

Slightly toast it in the oven

Top with pizza sauce and toppings

Bake until cheese has melted

Cutting the French bread lengthwise will yield four pizzas.

You can also cut slices about or of an inch thick for even smaller pizzas to serve at a party

Tortilla Pizzas and Stuffed Tortilla Pizzas

1 package of tortillas

Preheat oven to about 300F

Top the tortilla with pizza sauce and toppings

Bake until cheese has melted

For the stuffed version you will need to place another tortilla on top of the garnished one. You will need to turn it over after about five minutes of cooking time, or the top tortilla will harden. Cook for another five minutes.

Tortillas come in different sizes, so you can choose how mini you want your pizza to be.

There are several many other ways to prepare mini pizzas. All you need is a bit of imagination. Next time you find yourself wondering what to prepare for dinner, look in your pantry and see what kind of "crust" you may have at hand. Involve you children, and you might be surprised by their ingenuity.
