GREEN TOMATO RELISH (PICCALILLI)
Ingredients:
1 peck (12 1/2 lb.) green tomatoes
1 qt. large gherkins Or Sweet Pickles
2 green peppers
4 White onions
1 cup salt
2 qt. Cider vinegar
1 cup White Sugar
1 tbsp. Peppercorns
1 tbsp. Celery seed
1 tbsp. Mustard seed
1 tsp. whole cloves
Directions:
A) Chop the tomatoes, gherkins, peppers and onions, mix with the salt and set aside for 12 hours.
B) Drain well, then press to get out all superfluous liquid.
C) Heat the vinegar, sugar and spices, add the chopped vegetables and bring to boiling point.
D) Pack into heated sterilized jars and seal.
E) Process in a boiling water bath for 10 minutes.
The great thing about these recipes, is that they have a great sweetness, it's makes a great addition to your burgers, hot dogs, pork chops, etc! It has a different kind of relish taste, ane even though it has a bit more sugar than most like in their diets, it also has veggies that have great nutritional value. SWEET MANGO & GREEN TOMATO RELISH
Ingredients:
24 Green Tomatoes (med size)
6 White Onions
4 sweet Red Peppers
4 sweet Green Mangos
2 Bunches Green Onions
2 bunches of celery
3 1/2 c. vinegar
2 tbsp. mixed pickling spices
7 cups, white sugar
2 tbsp. Salt
2 Tsp. Fresh Dill
Directions:
A) Grind first 5 ingredients and cover for 5 minutes with boiling water; drain.
B) Boil vinegar, sugar, mixed pickling spices, salt & dill
C) Add ground vegetables and simmer for 5 minutes.
D) Pour mixture into warmed bottles, Seal while still hot.
