These cookies are not just good they are great. I love lemonade so these caught my eye.
If you like the summer treat of homemade lemonade you will love these cookies. I promise you that you wont be able to eat just one. Take these to a family gathering and you will be surprised at how fast these disappear. Make them in the winter and give them to your kids warm from the oven.
For an after school snack these are perfect. I made these one day because I wanted something different. I was tired of the traditional cookies and wanted to surprise my family with a unique treat. I love new things and found this recipe. It sounded good and I had all the ingredients already on hand. Boy, they didn't last long and my family was begging for more.
I take them to potlucks and large gatherings. I just make more than one batch and make a pretty tray. For Christmas I put them in a tin and tie it with a pretty bow. Give them to co-workers for an office get togeher. Try them and sit back and enjoy!
Lemonade Cookies
Ingredients:
1 cup butter or margarine ( softened)
1 cup sugar
2 eggs
3 cups flour
1 teaspoon baking soda
1 can ( 6 ounces ) frozen lemonade concentrate, thawed and divided
1. In a mixing bowl cream butter and sugar until light and fluffy, add eggs.
2. Combine flour and baking soda: add to the creamed mixture alternately with 1/3 cup of the thawed lemonade concentrate. Mix well.
3. Drop by rounded teaspoonfuls onto ungreased baking sheets.
4. Bake at 400 degrees for 8 minutes. Do not over bake. Remove to wire racks to cool.
5. Brush warm cookies with remaining lemonade concentrate...sprinkle with a little white sugar. Cool and enjoy
