I call this Pantry Casserole because I didn't know what to make myself for dinner one night so I started looking in the pantry and freezer trying to come up with some ideas from the stores I had on hand. I put this recipe together in a few minutes using a pound of ground turkey and some canned ingredients from my pantry and it turned out pretty good. After I tasted it, I had to write it all down so I wouldn't forget what I put in it. It's such an easy and great tasting recipe, I make it quite often.
You can make it by putting the ingredients into a casserole dish but I use a large cast iron skillet to cook the turkey, mix the ingredients and put it right into the oven for truly a one pan dish. Here's how to make it:
Ingredients:
1 lb (or a little more) ground turkey
1/2 a medium onion - diced
1 - 14.5 oz. can diced new potatoes - drained
1 - 15 oz. can whole kernel corn
1 - 10.5 oz. can condensed cream of chicken soup
1 - 7 oz. (small) can mushrooms stems and pieces - drained
1 - tbsp butter
1/4 - tsp salt
1/8 - tsp pepper
Melt the butter in a large skillet and saute the diced onion for a few minutes and then add the ground turkey, stirring and breaking it up until it's cooked through. Using ground turkey, there shouldn't be any grease or liquid in the pan but if there is, drain it off. If you have a large enough skillet, you can mix the rest of the ingredients in, otherwise transfer the turkey and onion to a large mixing bowl and then add the potatoes, corn, soup and mushrooms and mix well. Then transfer to a 2 qt. casserole dish and bake in the oven at 375 degrees for 45 minutes. Remove from the oven and let it rest for 10 minutes and it's ready to eat.
This is a really easy recipe and tastes great but you could modify it to suit your taste and what you have on hand in your pantry. It's an easy recipe to experiment with. Enjoy.
Hey, while I'm here, I might as well tell you about a quick and easy "breakfast on the run" that you can make in just a quick few minutes. I know you don't always have time to make a good nutritious breakfast, especially when you're running a little late but you can make this hot breakfast sandwich and not even dirty a pan. Here we go:
Ingredients:
1 egg
1/8 cup or less milk
1 slice of American cheese (optional)
2 slices of bread or bagel
Non-stick cooking spray
Pop your bread or bagel in the toaster. Take a small bowl and lightly spray it will non-stick cooking spray. Crack an egg into it, add a little milk and beat it with a fork for about 20 seconds.
Microwave on high for 1 minute. Immediately put the slice of cheese on top. The egg will be hot enough to melt the cheese in a few seconds or you can microwave another 5-7 seconds.
By now your toast or bagel is ready. The egg/cheese will slide right out of the bowl onto your toast or bagel thanks to the non-stick spray. You can add a little mayo, salt and pepper if you like and it's ready to eat as you're running to your car and the best part is, you don't even have a pan to wash.
