Unlike what its name implies, Rocky Road should be easy to make, without any fuss, much less baking. The most difficult thing in making it should be avoiding to eat all the ingredients and finished product before serving it to other people.
Rocky Road is basically just a melt and pour chocolate project with your creativity to make the dish look more beautiful and delicious. You can even make it as a gift! You can include your very small kids from 5 years old onward to help you. They can even make it themselves, providing you watch over them when you melt the chocolate. This recipe is very great for pajamas parties or birthday parties and you'll see how much children love it!
In this recipe, you'll find that it might yet be the hardest thing you'll ever do. So prepare two batches in case you or your assistants eat it all up before it's even set.
Improvise for the dry ingredients. Use leftover ingredients. Anything you like when drizzled with chocolate (which is pretty much everything).
Five minutes Black and White Chocolate Rocky Road with Marshmallow and Nuts
Ingredients:
- 1 1/2 bar of dark chocolate of your choice.
- 1 bar of white chocolate. Feel free to adjust the amount according to your taste and availability.)
- Handful of nuts. Again, feel free to improvise, but they must be ready to eat. If not, roast them first.
- Half package of Marshmallow. Any marshmallow, but I prefer not to use the ones with fillings because it makes the Rocky Road taste weird.
- A handful of gummy bears or other chewy candies
- Chunks of Oreo biscuits or similar
- Dried fruit and raisins
How to:
1. Break the chocolate bars into chunks in microwave-proof dishes. Separate between the dark and the white ones.
2. Line the sides and bottom of a shallow rectangular mold with baking paper. Do not cut the paper, use whole paper for the mold, so it'll be easier to pull out when it's set. You can use whatever rectangular shallow mold convenient for you. I use a 10 cm x 5 cm x 2 cm aluminum mold. You can also use mini cupcakes mold. Line 12 cupcakes mold with baking sheet (if you want to peel it out before serving) or colorful cupcakes papers.
3. Arrange the remaining ingredients in the mold, alternating between hard and soft. Sometimes it's easier to put it in a plastic bag, shake it, and pour it out to the mold. What a fun way to work!
4. Melt the White Chocolate first. Put it in microwave, set to reheat, for 1 - 2 minutes. Check if it's melted completely. If not, put it back to the microwave for 1 minutes or two. Pour it over to the mold.
5. Do not wait until the white chocolate is set. Melt the dark chocolate in same way. It'll probably take a little longer. Do not set to High or the chocolate will loss its glossy look and burnt. Stir it every time you check the chocolate to even the heat. Once it's done, let it cool for about 30 seconds.
6. Pour it to the mold. The white chocolate is not completely set yet. With very small spoon, very gently swirl the ingredients, taking care not to get the white chocolate and dark ones mixed, only to get it into swirly consistency.
7. Let it set. Take it out, peel off the baking paper and cut into squares.
8. Serve it as it is or as topping to ice cream.

Line 12 mini cupcakes mold with golden truffle cups to make it look luxurious. Proceed with the instructions. After it is done, put the Rocky road pieces to a tin can and wrap it with ribbon.
