Recipes: Banana pudding

Quick Coffee and Caramel Banana Pudding

I got this recipe from a cookbook and modify it to suit my taste better. It can be made from leftover sponge cakes. Or you can omit the cakes altogether and use only the bananas. You can also replace coffee with rum to make it taste richer. Very quick, easy, and tasty.

Ingredients:

- 3 slice of ready made or leftover sponge cake. Feel free to improvise. Or omit it altogether. Break into chunks


- 8 ripe bananas, sliced (not too ripe though, or it'll become too mushy)
- 3 tbsp of rum or coffee. For children, you may even use fruit juice or milk.
- 1 cups Fromage frais (or whipped cream if you are not counting calories).
- 4 tbsp soft brown sugar.

How to:

Arrange the cakes on a dish. Pour the rum or fruit juice over the cakes and let it soak to the sponge for about five to ten minutes. On top of it arrange half the bananas. If you are feeling creative and want to make more elaborate dessert, layer it like this: Cake, banana, cake, banana, and top it with the cream layer. Fold the remaining bananas with the whipped cream/ fromage frais. Spoon it on top of the banana layer. Scatter the sugar on top of the cream. Put under very hot top grill for 2 - 3 minutes or burner to caramelize. Serve chill or warm.

Alternate way to serve:

Cut the banana and cakes into very small pieces. Soak them with coffee or rum for five to ten minutes. Fold into the fromage frais or whipped cream. Put it into overproof dish. Scatter the sugar on top of the cream. Put under very hot top grill for 2 - 3 minutes or burner to caramelize. Serve chill or warm.
