Recipes: Taco seasoning

It's very hard to find a place were you can enjoy a good Mexican taco and truly feel like you are in one of those street stands in Mexico having a taste of the real deal.

Many of us taco lovers prefer to cook our own tacos since that might be the only way we could ensure we eat something that deserves to be called a Taco. You buy the best ingredients and even wear a nice sombrero so you can wrap yourself in a taco atmosphere but when you get to the eating part... well, let's just say things feel a little dry.

To overcome this dry sensation I present to you a couple of recipes of very traditional taco seasonings that can be found in almost every taco stand in Mexico.

Guacamole sauce

Ingredients

2 avocados, average size
1 small bunch of parsley, chopped
cup onion, chopped
cup water
1 teaspoon oregano, powdered
Ground black pepper to taste
Salt to taste

Directions

1. Heat the water for a couple of minutes until it gets warm.
2. Put the avocados, the oregano and water in a blender.
3. If you want it to be sparser just add more warm water.
4. Season with salt and ground black pepper.
5. Mix with the onion and the parsley.

Green sauce

Ingredients

2 jalapeos (if you want it to be spicy)
10 ground cherries
1 garlic clove
3 teaspoons coriander, chopped
1 teaspoon onion, chopped
Ground black pepper to taste
Salt to taste

Directions

1. Roast or fry the ground cherries and the jalapeos.
2. Put the jalapeos, the garlic clove and the ground cherries in a blender.
3. Sparse the sauce to taste with warm water and blend.
4. Season with ground black pepper and salt.
5. Mix the sauce with the coriander and the onion.

None of these two seasonings are made to last a long time in the fridge so make sure you invite enough people with the habit of eating swimming tacos and prepare just one seasoning at a time.

I know eating a taco swimming on its seasoning can be a little messy but if I wanted to give you a recipe of a classy food I would be teaching you how to prepare escargot, wouldn't I?

With these two recipes and a good taco recipe we can finally say, "It's taco time!"
