Cooking for two is accomplished by one of two ways: either you cook for 4 and have another meal ready for you to freeze or you must choose recipes where it won't matter how many servings you are making.
If you are dying for turkey and all the trimmings you can make a whole turkey and freeze the leftovers in two-person meal packets. But you can also compromise and roast a small turkey breast or some legs and wings.
Spaghetti and meatballs is just about impossible to make in tiny portions, but what you can do is make up your meatballs and freeze all but the ones you intend to eat that night. At any time you can take the frozen meatballs and add them into a tomato based sauce or even turn them into Swedish meatballs with some sour cream and beef broth.
Spaghetti sauce can also be frozen in either freezer bags or plastic containers so you can make a large potful of sauce without worrying about consuming it all at once.
If you're out of freezer room but are starving for a big bowl of vegetable soup, you can make a small pot of soup by opening a can of chicken or beef broth and adding in chopped vegetables. Let it simmer for 40 minutes and enjoy with a slice of crusty bread.
Speaking of bread, you can take your homemade bread recipes and form smaller loaves for baking - freezing the extra loaves for later.
Many recipes can easily be halved. Homemade cakes, for example can be halved without a problem. If you have a small 6 inch pie tin, you can use the recipe for a single pie crust and it is enough dough for both the top and bottom crust.
And, if you don't mind leftovers, cook for four and eat half one day, skip a day, then eat the other half. By skipping a day and eating something different in between, it will keep you from being bored with your food.
If you really want a roast leg of lamb and don't have room to freeze it or don't like to eat lamb leftovers, invite some friends for dinner and not only will you be able to enjoy the lamb, you can enjoy the company too.
