I don't believe the true Sabbath is either Saturday or Sunday, or any day for that matter.
I am well aware of the fact that the world was made in six days and God rested on the seventh, and this is where the argument lies, but I am convinced "the Sabbath day" is as much a part of the old law that was done away with as any other part of it.
If you think about it, the Pharisees included the Sabbath in their arguments concerning the "law" and Jesus always answered the same way. He always tried to show how it was no longer necessary to be bound by a law that depended on works for salvation. Questions about the Sabbath were treated no differently than any other questions concerning the law.
Think about the question the Pharisees asked Jesus about healing a man on the Sabbath. They wanted to know if it was "lawful." They were actually trying to trip Him up because they, being so knowledgeable of the "law," believed all their observances and practices (works) showed how faithful they were. They were so intent on the observance of "days, and months, and times, and years," (Galatians 4: 9) they could not see anything Jesus tried to show them.
Once, when questioned about the disciples eating corn on the Sabbath, Jesus told the Pharisees, "The Son of man is Lord even of the Sabbath day." I believe the point He was trying to make was that He, being Lord over all things, including the Sabbath, meant it was no longer in affect as they knew it. His very actions on several Sabbath days served to point out that no particular day is important, or reverence to any law; but acts of kindness and mercy are more important to one's salvation.
Just as any other ritual or act of observance under the old law, I believe the act of observing the Sabbath on a particular "day" was replaced with the only true rest we can ever be assured of, and that is Jesus. He is our rest; He is our Sabbath, and we can go to Him any time. If people want to fellowship on Saturday or Sunday, or even on Monday, I think that's a wonderful thing. It would be even better if they did it every day. As far as which day the true Sabbath is, I just don't believe any "day" is.
