Here is the easiest recipe to whip up for dinner after a long hard day or work. Chicken Fried Rice. Yum! Ok, this recipe is good especially with left overs. This is because this recipe is flexible for you to use whatever is left over in your fridge and you can turn into something so yummy and scrumptious which is good to serve in a big hearty portion for a family dinner or even when you have guest coming over. So this is the ingredients you need.

Note: You can change the size of the portion depending on the number of people you are serving this dish too. This recipe serves for 1 person.

1 cup of cooked rice

1/2 a ball of french onion or purple onion

1 clove of garlic

1 egg

1/2 a cup of shredded chicken

1/2 a cup mixed vegetables (to pump up the vegetable intake in your food but its optional)

salt

white pepper

light soya sauce

spring onion (for garnish)

Let's put the dish together!

1) Chop 1/2 an onion, 1 clove of garlic and spring onion. Put the spring onion aside

2) Crack 1 egg in a bowl and beat it. Fry the egg and scramble it. Once it is cooked put it on a plate and set it a side

3) Now, add some oil in the frying pan and add in the chopped onion and garlic. Fry until they are fragrant.

4) Add in 1 cup of cooked rice, cooked egg, 1/2 cup of shredded chicken and 1/2 a cup mixed vegetable. Combine the ingredients well.

5) Season the rice with salt and white pepper, continue to stir the rice occasionally

6) Put 2 tablespoons of light soya sauce and keep stirring until all of the ingredients have nicely been incorporated

7) Plate the chicken fried rice on a plate and garnish it with the spring onion you have set aside earlier on

Now, the dish is ready to be enjoyed. If you are serving this dish to entertain with guest, you can jazz it up by putting a lime wedge at the side. This would create another dimension with this dish as squeezing the lime juice help the flavours of the chicken fried rice pop out. This dish is good to serve for lunch as well as dinner. Enjoy your chicken fried rice!
