Tips to help you eat vegetables
Do you want more vitamins in your diet? Do you dread the veg? If you think you don't like vegetables, or the kids don't, try some of these ideas and then we'll just see if you still feel the same way!
Kids are notoriously the worst little creatures when trying to get them to eat veggies, however, arguably, there are probably more than a few adults in this world that feel the same way! This does not have to be! There are many ways to incorporate veggies into your menu and not even notice! They are actually in things you already love!
For example try out these recipes, and tell me if you still think that you, and your favorite kid, still hate veggies!
Dirty Rice
2 cups of rice
1 lb of ground turkey, or beef, browned and well drained
1 tablespoon garlic powder, or 1 crushed garlic clove
2 packages of taco seasoning mix
1/3 cup olive oil
1 large green bell pepper, diced
1 large red bell pepper, diced
1 large yellow onion, diced
2 cans or 1 large package of peas drained or thawed
1 whole carrot, diced
4 cups of water
In large saute' pan heat oil, add rice. Brown rice until toasty. Add green and red peppers,onions, cook mixture and move mixture as it heats. Saute' until onions are transparent. Warning, this is going to make the house smell so good that everyone will ask what time are we eating! Add in taco seasoning and again mix thoroughly until all rice is covered.
Add browned meat, water, carrots, and peas. Cover and heat to a boil. Reduce of low heat and cook for 20- 25 minutes until rice is done!
Not only is it delicious, it also makes a colorful plate presentation. Serving suggestions: Delicious all by itself, excellent with tacos, and even in tacos, and also with Mexican tortilla chips, almost as an appetizer! I know, I have seen many a chip reaching over my stove to test the rice, to see if it was done,of course! All for me! Oh such helpers I have I tell ya, those little vegetable haters!
Also another excellent and easy lunch recipe are the ever popular personal pizza pita ! These yummy little pizzas are so easy to make and again, a great way to incorporate those veggies! The key here is to dice the veggies very small. Also it is fun for kids to make their very own.

Heat oven to 425 degrees
1 package of pita bread
Squeeze bottle or can of pizza sauce
cup diced green peppers,
cup diced onions
cup of broccoli florets
8 oz package of shredded mozzarella low fat cheese, or any cheese blend you love
In saucepan heat sauce and veggies, bring to low boil and stir. Reduce heat to low and cook for 10 minutes.
On cookie sheet place 4 pitas.
Spoon cooked sauce over pita bread, sprinkle shredded cheese
Bake in oven for 10 minutes.
In a hurry? You can make these easily in the microwave!
