Best Banana Bread

This banana bread is for those of us who enjoy a moist almost "cake like" banana bread, great for both desserts and breakfast. I have also made this recipe as both banana muffins with a toasted walnut topping, and have altered it slightly for terrific banana cupcakes with a cream cheese icing.

1 stick unsalted butter
1 C sugar
2 eggs
1.5 C flour
1 tsp. baking soda
1 tsp. salt
1 heaping C mashed ripe banana
1 C sour cream
1 tsp. vanilla extract
1/2 C chopped pecans or walnuts (optional)

Preheat oven to 350 degrees. Butter a 9X5X3 loaf pan.

Cream butter and sugar, add eggs and beat well. Mix together dry ingredients and add slowly to butter mixture. Blend well. Add the bananas, sour cream and vanilla. Mix well. Stir in the optional nuts and pour into prepared pan.

Bake 1 hour, until toothpick inserted into middle comes out clean. Let cool for 15 minutes then turn out onto a rack to cool completely.

Makes 1 large loaf. You may also use muffin tins, makes 12 large muffins.
