Easy Chocolate Cake.

This really is an easy chocolate cake to make and is in fact my favorite recipe for chocolate cake. It has a rich chocolate flavor and the texture is moist not dry, unlike some other chocolate cakes.

I cook the mixture in two 7-inch cake pans and usually layer the two halves together with a chocolate butter cream frosting, then top with chocolate icing. Although sometimes I have used whipped cream or chocolate ganache, use what ever you like. As the cake is not over sweet, it can take a sweet frosting.



Ingredients:
175g / 6oz sugar
4 tablespoons cocoa (unsweetened)
75g / 3oz butter, melted
2 eggs
75ml / 3 fluid oz milk
250g / 9oz flour
1 teaspoons baking powder
6 tablespoons boiling water

Preheat the oven to 375 degrees F, 190c, and gas Mark 5.

Grease and line two 7-inch cake pans.

Put the ingredients into a bowl in the same order as they appear above. Start by sifting the cocoa and sugar together, add the melted butter and eggs together then the milk, sieve in the flour and the baking powder, then add the boiling water.

There is no need to start mixing the ingredients together before you get to this stage. Now beat well until smooth. Then pour this mixture into the already prepared cake pans (don't worry at this point if the mixture looks too wet, runny and not very cake like).

Bake in the oven for about 25minutes. When ready, the cakes should rise slightly and spring back when they are touched. The surface often cracks somewhat, but this is easily covered by the frosting.

Turn out of the pans and when cold fill and frost the cake as desired. This cake actually improves if you keep it a couple of days before eating, something we rarely manage to do.
