Recipes: Quick mini-pizzas

Mini pizzas are incredibly easy and fast to make, yet they are great for satisfying a hearty appetite and take so little effort that they can be altered according to need. Alternate toppings can also be used to change the flavor so everyone will fall in love with them.

Ingredients:

1 pound ground meat
2 8oz cans tomato sauce
1 8oz can mushroom pieces or equivalent diced fresh mushrooms (optional)


1/2 medium onion, finely diced
1/4 cup shredded cheese
2 small tubes bake in the oven biscuits

1. Brown the meat, onions, and mushrooms in a fry pan over medium heat. Add the tomato sauce, lower the heat to simmer, and stir occasionally.

2. Between floured hands, pat the biscuit sections out until they are each about 1/4 inch thick, and then place these on an ungreased cookie sheet, leaving a little space around each for even cooking.

3. Put 1-2 spoonfuls of the meat mixture in the center of each biscuit and sprinkle with cheese.

4. Bake at 350 degrees F., until the biscuit edges are golden and the cheese has melted, about 10 minutes. Serve hot.

This recipe makes about 20 mini-pizzas; enough for 2-3 people, and the recipe can be easily expanded.

Alterations are also simple. For instance, cheddar, jack, and Colby cheese all give a slightly different flavor. Basil and oregano can be added when cooking the meat. The meat can also be changed; beef, venison, buffalo, pork sausage, and shredded chicken each give different flavors to the dish. Celery, thinly sliced, can also be added to the meat mixture when it is cooking.

After cooking, the pizzas can also be topped with tomato slices, Canadian bacon slices, pineapple, cracked shrimp, olives, or about anything else, you can think of for a pizza topping.

A side dish isn't necessary, and this dish goes well with a fresh fruit dessert or baked apples.

Mini-pizzas are not only quick and easy to make, but they are also tasty and filling. Some people say that they freeze well, but it is a little hard to find out for sure. They taste good even cold, so it may be difficult to have so many of these for leftovers, to try freezing them.
