On a hot summer day, all you want to eat is just a light salad. Easy to make and easy to digest. Follow these easy steps and enjoy this mouth watering basil-pasta salad! A perfect choice for you and your family!

Ingredients

- cup chopped green and red onions

- cup chopped green and red peppers

- cup red beans

- cup corn

- cup thinly chopped basil

- 1 cup boiled dry fusilli

- couscous

A small tip: add any kind of vegetable you want. You will just give a personal touch to your salad. Try combining different veggies! After all, everything is a matter of personal taste.

Dressing

- vinegar

- 1 teaspoon olive oil

- 2 teaspoons Dijon mustard

- 2 teaspoons sugar

- 1 teaspoon salt

- 2 cloves finely chopped garlic

- pepper

Preparation

- Place all the ingredients inside a big salad bowl and mix until all blend together. Put the salad in the refrigerator and leave it rest until the dressing is ready.

- Preparing the dressing is rather simple. Blend all the ingredients together until they become a fine dressing sauce.

- Take out the salad and pour all dressing sauce on it. Leave it in the refrigerator until it is time to serve. Dressing will perfectly merge with pasta and vegetables, giving you a delicious result.

- If you want to make this salad with less carbs, you can replace fusilli with brown ones or any other brown pasta you like. In addition, replace sugar with diet supplements.

These ingredients give you twelve serves if used as a side dish and six if used as a main dish.

You can serve it with more vegetables placed aside with a hint of freshly chopped basil. The aroma of basil will make everyone run to the kitchen! Your children will love it as it contains pasta and it is a great way for them to eat veggies too! Serve it and watch your loved ones enjoy this tasteful salad while praising you! Trust me, everyone will be thrilled!
