A breakfast that can be quick and easy and if done correctly prepared ahead of time would be Egg Muffins. Here is an easy thing for the children to heat and serve quickly on there way out to school or for you to heat and head to work on. As we know we should never skip breakfast and what an easy way to help accomplish this.
First let's find that Muffin pan. If you are going to prepare ahead you may want to use a larger muffin pan or several small pans. For easy clean up don't forget to put in the paper cups to the pan. Or if you might have the new Silicone muffin holders you can use them as well. Next lets spray those muffin papers with olive oil or butter spray. We don't want that egg sticking to the paper or silicone.
For easy Egg muffins 16 muffins
1 dozen Medium Eggs
1 cup shredded cheese
12 sausage links cut into bite size pieces/ or 12 slices of bacon crumbled / or diced ham pieces.
3 tsp milk
2 tsp flour
Salt and pepper to taste
In a large bowl put your eggs milk and flour. With a mixer scramble well and then add your cheese and meat to the mixture. Salt and pepper fill your muffin cups about full with the mixture. Top with a little sweet basil or maybe paprika for some added flavor and color. Preheat the oven to 375 and bake for 20-25 minutes or until muffins are light brown, puffy, and the eggs are set.
Once they have cooled some remove and serve. Serve with some toast or maybe even biscuits and gravy. Add a little fruit to the table and what a breakfast.
Now if we are going to serve this later to the children the next day on there way out the door. Put in individual plastic bags and freeze. Then remove one at a time and Microwave for 1.5 min on Md and then send them out the door with there warm egg muffin.
