Cooking stoveless to keep cool in summer

Outside the sun is sizzling and the pool is calling. As the summer starts to sizzle, the thought of heating up the whole house to make dinner does not sound refreshing. The kids are hungry, the air conditioner is already straining, and the temptation to eat out just one more night is really enticing. Yet, though all those pre-made meals that are high in fats and loaded with sodium may be convenient now, the health detriments can be terrible in the long run. By simply cutting down on stove and oven use, you can make a huge difference, keeping your home cool and refreshed, getting dinner ready even quicker, and eating even healthier.

To begin, stock up on fresh fruits and vegetables. Start using those handy heat saving cooking devices, such as the slow-cooker, hot pot, microwave, toaster, and even the bread maker. Another time-saving tip is to make food ahead of time and freeze it to microwave later, just prior to serving. You would be surprised at how much cutting back on stove use will not only save you money, but will keep your house cool in the hottest of summers.

These quick and stove-less recipes will get you started, so you can provide a wholesome and delicious meal without the heat. Healthful for family dining and perfect for backyard entertaining, these fresh summer dishes are the ideal choice.

Fiesta Fruit Bowl: This refreshing combination of fresh fruits, nuts, and whipped cream makes a great appetizer for 6 or supplemental dish in an outdoor BBQ. Simply combine 4 diced apples, 2 cups diced pineapple, 3 diced pears, 1 cup grapes, cup chopped pecans, cup sweet shredded coconut and cup white raisons. Top with whipped cream and mix thoroughly before serving.

Zesty Chicken Wrap: Quick and satisfying, these wraps for 6 can be enjoyed hot or cold. Merely heat them up in the microwave just prior to serving for a hot meal without heating up your kitchen. You will need 2 avocados, cup salsa, cup low-sodium canned black beans, fat-free sour cream, and 6 small whole wheat tortillas. Cream the avocados and spread in to the center of the tortillas, from end to end. Add salsa, beans, and chicken. Wrap the tortillas tightly and serve with a spoonful of sour cream on top.

Confetti Salad: This surprisingly easy dish for 6 will be a colorful addition to any dinner spread and an instant favorite. Combine: 3 cups corn (thaw frozen corn in warm water and drain), cup chopped red onion, cup chopped green bell pepper, cup red bell pepper, cup lime juice, tsp red pepper, and powdered garlic, pepper, and salt to taste. Mix thoroughly in a large, brightly colored serving bowl and refrigerate before serving.

Serve these dishes together for a delightful dinner spread on a warm summer night or serve them individually as appealing appetizers at a party. Now by keeping cool in the kitchen, you have more time to spend outdoors. Go take a swim!
