Recipes: Easy meals with one pound of ground beef

Looking for some great ideas using ground beef? I am going to share a few of my favorite recipes with you. I always try to get to the supermarket early in the morning when the store has marked down their meats. This is good way to get some great deals on ground beef. Many times you can get enough to put in the freezer so you'll always have the main ingredient for a fast and easy meal.

SLOPPY JOES:

Ingredients:

1/4 cup olive oil

1 medium onion diced

1 small green pepper diced

2 stalks celery diced

1 clove garlic diced

1 pound ground beef (you could also use ground chicken)

1 can tomato soup

1 tbsp Worcestershire sauce

1 tsp chili powder

1 tsp cumin

1 package burger rolls

Saute the onion, pepper, celery and garlic in the olive oil. Remove from pan and fry the ground beef until fully cooked. Drain the grease from the meat. Add in the sauteed vegetables, tomato soup, Worcestershire and spices. Cook on medium low heat for 20 minutes, stirring occasionally. Put a good scoop on the burger roll and enjoy!. I like to serve french fries and a tossed salad on the side.

HAMBURGER SOUP:

Ingredients:

1 pound ground beef

1/4 cup olive oil

1 small onion diced

2 stalks celery diced

1 clove garlic diced

2 carrots sliced

1 can or package of frozen corn

2 cups cauliflower florets

1 cup Lima beans

2 large cans chicken broth

In a large soup pot start heating the chicken broth. Saute the onion, celery and garlic in the olive oil and add to the broth. Fry the ground beef until fully cooked and drain off the grease. Add the ground beef to the broth. Add in the corn, carrots and Lima beans and heat on medium heat for 20 minutes. Add the cauliflower and cook for 5 more minutes so cauliflower won't get mushy.

TACOS:

Ingredients:

1 pound ground beef

1 package taco seasoning (like Chi Chi's Restaurante style)

1 package soft or hard taco shells

1/2 cup water

1 tsp cumin

1 tsp chili powder

1 scallion chopped

1 cup diced tomatoes

3 cups shredded lettuce

2 cups shredded Mexican cheese

Fry ground beef until fully cooked and drain off grease. Add taco seasoning and water and cook on low heat for 20 minutes. Heat the shells according to the package. Add the meat, cheese and veggies and eat up!
