They're also great to make for a quick and tasty lunch. Or, it's a great recipe to send to college students who might only be able to cook via a microwave oven. Actually, these mini pizzas, when served with a tasty side salad, can also serve as a fast and nutritious family dinner.

These mini pizzas are tasty, filling, and, while directions here are for certain toppings, you can really use any toppings that you would like. Seasoning the whole wheat pita that serve as the "mini pizza" crust here also helps to bring out a great flavor in these Easy Breezy Tasty Mini Pizzas.

To make these fast and delicious easy mini pizzas you will need:

A pack of whole wheat round pita bread (one round pita per mini pizza)

Spaghetti sauce (you can just use jarred spaghetti sauce)

Olive oil, garlic power, dried oregano

Sliced or diced onions (whichever you prefer)

Sliced raw fresh ripe tomatoes, lightly salted

A few pieces of pepperoni

Some low-fat shredded mozzarella or low-fat shredded sharp cheddar cheese

Directions:

For each pizza, place one round whole wheat pita on a roomy microwave-safe plate. Pour a small amount of olive oil on one side, and in middle of the pita.

Using a paper towel, rub olive oil over surface of pita.

Add garlic salt, and dried oregano to taste to pita.

Cover pita next with sliced raw tomatoes, add sliced or diced onions on top of tomatoes. On top of this, add a few pieces of pepperoni.

Cover all ingredients with a generous helping of shredded cheese.

Pop microwave-safe plate that holds now-prepared whole wheat pita into microwave. Microwave each mini pizza for two minutes, or until cheese on top has thoroughly melted.

Serve immediately.
