Forget fast food and pass up the pizza delivery in favor of healthy, tasty, one-pot meals that can be your solution to the daily "What's for dinner?" dilemma. One-pot meals take many forms including salads, casseroles, slow-cooker meals, and skillet suppers. Skillet meals can become a stressed cook's savior because they are created from ingredients on hand and often take less cook time than a traditional casserole or slow-cooker meal.
For something quick and fun, try breakfast for dinner with a hearty but healthful egg skillet scramble bursting with fresh vegetables. Browned ground turkey or beef can be substituted for the bulk sausage. Leftover taco or sloppy joe meat also works well.
Skillet Scramble (serves 4) (Prep. 15 minutes, Cook time 15 minutes)
Ingredients
* 6 egg whites, 4 large eggs
* one quarter cup of skim milk
* 1 small head broccoli, about 1.5 cups
* 1 small red onion, diced
* 1 medium tomato, seeded, diced
* 1 medium green pepper, diced
* 2 cups fresh, sliced mushrooms
* 1 pound bulk, breakfast pork sausage or turkey sausage for less fat
* 1 clove or 2 teaspoons fresh garlic
Wash and prepare the vegetables, set aside. In a large bowl, combine 6 egg whites with 4 large eggs and one quarter cup of skim milk. Whisk together for one minute. Coat a large skillet with non-stick cooking spray.
Brown the sausage until crumbly and fully cooked, no pink showing. Push the sausage to one side and add the vegetables to the skillet. Cook the vegetables for about 4 to 5 minutes until crisp, tender and bright in color. Push them to the side with the sausage. Pour the egg mixture into the hot skillet on the empty side. As soon as the eggs start to bubble, scramble with a spatula. When the eggs are scrambled and cooked, gently fold them into the sausage and vegetables. Add salt and pepper to taste. If using leftover taco or sloppy joe meat, cook the vegetables first for about 4 to 5 minutes, then add the leftover meat to get it thoroughly warmed before adding the eggs.
Serve the Skillet Scramble with toast or American biscuits and fruit preserves.
