All you need to know about allium vegetables

When you cut into an onion, the enzyme Lachrymatory-factor synthase is released, causing a chemical chain reaction that results in you shedding a few tears. Still, you chop the onion, knowing it will make you cry. Why do you do this? Because you want to hear the sizzle of hot oil when your chopped onion hits the pan.

Onions, garlic, shallots, leeks, chives and scallions are all allium vegetables and will make your sauces, soups and stews taste delicious. Consider how your spaghetti sauce would taste without onion and garlic. A baked potato is practically naked without chives. Scallions and steak are made for each other. Your oil and vinegar dressing needs those shallots for zing and zest and vigor.

The allium vegetable is the flavor in your cuisine. They also are cancer fighters. Loaded with organosulfur compounds, the allium family is believed to prevent cancers of the stomach, colon and rectum.

The sulfur compounds found in these vegetables also aid in controlling heart disease, diabetes, osteoporosis and, oddly enough, gastrointestinal disorders. Once in the digestive tract, onions and garlic seek out and destroy parasites and viruses. Pretty impressive for veggies that are often seen as little more than flavoring for the main dish.

The flavor of the allium vegetables is distinct. Earthy, edgy and more bitter than sweet, onions, garlic, leeks and chives are not favored by children or even some adults. Even hidden in broths, sauces and dips, their robust essence may be detectable.

If you want the benefits of the allium vegetables, but aren't fond of the taste, try some of the milder members of this family.

Scallions, for example, are immature onion bulbs and may offer a more palatable flavor. The effect of elephant garlic cloves on foods is less pronounced, but you still receive the health benefits. Leeks in a soup may be a little overpowering, but add a small amount to a stir-fry and their zest is less invasive.

Do incorporate allium vegetables into your diet, though. The health benefits are numerous and these vegetables do compliment your cooking. Used wisely, they will not overpower your cuisine.

Allium vegetables are also a favorite of gardeners. They are natural protectors of neighboring plants. Plant onions with your strawberries; the onions help the strawberries fight disease. Garlic repels aphids and fungi; plant it near your tomatoes and cucumbers. Then harvest it all and make a salad.

Planting allium vegetables in your garden is an organic method of disease and pest control referred to as companion planting. Pairing up these vegetables with your other tomatoes, cucumbers, squash, peppers and fruits will not only keep your garden healthy, but also provide you with a bounty of flavor for your meals.
