Many gourmet specialty, high end grocery stores and health food stores sell expensive bags of vegetable chips. They are very tasty, but one can easily make an even more delicious version by using freshly harvested vegetables. The best vegetables to choose are vegetables that can easily be sliced into thin slices or strips.
Decide what vegetables to use -
Potatoes are better when the skin is left on. The skin provides a lot of beneficial vitamins. Other than potatoes, turnips, sweet potatoes, zucchini, squash, and possibly carrots and parsnips can work. Other root vegetables can also work. Onions are great as chips.
Once vegetables are sliced into the thinnest possible slices, put them on a non-stick foil lined cookie sheet. The easiest way to get thin slices is by using a mandolin slicer.They work wonderfully, but are extremely sharp, so be careful of the hands.
Preparing the vegetables -
Lay the vegetable slices out on the cookie sheets, making sure that none of the slices overlap. Sprinkle a coarse salt such as Kosher salt over the vegetables. Be liberal while when sprinkling the salt. The goal is to draw some water out of the vegetables before baking them.
Allow the vegetables to sit for a while so that the salt can absorb some of the moisture.
BAKED VEGETABLE CHIPS -
There are two methods by which the vegetable chips can be baked. Baking the chips is a much healthier alternative to frying them.
This method involves cooking the vegetable chips at a lower temperature for a longer period of time. The oven would be set to about 300 degrees, and the vegetable chips would cook for a minimum of an hour, and possibly as much as two.
This method cooks the chips must faster, but it does so at a much higher temperature. The oven would be set to 400 or 450 degrees. The vegetable chips would cook for a much shorter period of time. The chips could cook as fast as in 30 minutes or as much as 45 minutes to an hour. Oven temperatures vary. Electric ovens may cook the chips faster because they have the added advantage of having upper and lower coils.
The goal is to get the chips cooked to the point where they are crispy and browned. One method using the high heat would be to turn the heat up to about 450 degrees for 30 minutes, and then turn the heat up to broil for about 5 minutes to brown the chips. This method requires constant vigilance because the chips will cook so much faster. It is wise to check on them about every 15 minutes to make sure
